Watching the Techniques episode on Anthony Bourdain’s “No Reservations” a few days ago got us in the mood to try the recipes demonstrated on the show, so we made French fries tonight using the same recipe Bourdain did at his New York restaurant, Les Halles. It was the first time we ever tried to make fries, and it came out really well — crispy on the outside, soft on the inside. It was super easy to make, and all it took was four Russet potatoes, a few quarts of peanut oil, a small deep fryer, and a handful of salt.
